Ibuki Aji-Kiri Knife

An aji-kiri is a small knife used like a compact deba, suited for breaking down small fish such as horse mackerel (aji).

This knife is single-beveled and made of hagane (high-carbon steel). “Ibuki” is a discontinued item from the Seki Magoroku line. While there is darkening typical of carbon steel, the sharpened edge shows a clean silver hagane surface.

It has been sharpened and is ready to use upon arrival. Please handle with care when unpacking. The price includes the sharpening service.

It features engravings “伊吹” (Ibuki) and “関孫六” (Seki Magoroku).

For home fish prep, an aji-kiri is a fun and capable tool—small enough for quick work, but stout enough to handle heads and bones on small fish.
