Sakai Hosen Takobiki Knife
A takobiki is a Kanto-style sashimi knife with a long, narrow blade designed for smooth pull cutting.
This knife is single-beveled and made of hagane (high-carbon steel). It appears to be an unused or nearly unused stored item. There are tiny dark marks from storage and a very small chip on the water buffalo handle, but overall it is an exceptionally clean piece.
It has been sharpened and is ready to use upon arrival. Please handle with care when unpacking. The price includes the sharpening service.
It features engravings “堺豊泉作” (Sakai Hosen-made), “本鍛錬” (Traditional Forging), and “極上” (Premium Grade).
For sushi and sashimi, a takobiki helps you make long, single-stroke cuts with minimal tearing—exactly the kind of slicing sushi chefs aim for in sushi restaurants.
