The Aji-Kiri is a compact Deba-style Japanese knife designed for cleaning and filleting small fish. This model has a solid blade thickness, providing stability while remaining easy to control.
This single-edged Hagane steel knife offers excellent sharpness and can be resharpened repeatedly for long-term use. Its sturdy thickness makes it especially suitable for processing small fish with confidence and precision in traditional Japanese preparation.
