Masamoto Sohonten "Saijo" Santoku Knife

This is the "Saijo" santoku knife from Masamoto Sohonten. The santoku is a well-balanced all-purpose knife suitable for meat, fish, and vegetables in both Japanese and Western cooking. Although there is some shallow patina typical of Hagane steel, as seen in the photos the knife remains in very good condition and still has plenty of life ahead.

The knife has a double-bevel Hagane (carbon steel) blade, offering the keen, crisp sharpness characteristic of Masamoto.

It has been sharpened, so it is ready to use immediately upon arrival. Please handle with care when unpacking. The price includes the sharpening fee.

It bears engravings "登録商標" (Registered Trademark), "正本総本店" (Masamoto Sohonten), and "最上" (Saijo).

This Saijo santoku is ideal for cooks who want to experience the sharp, responsive feel of a traditional Masamoto carbon steel blade in daily cooking.
