Sugimoto Yanagiba Knife

This is a Yanagiba knife from Sugimoto. Yanagiba knives are used for slicing sashimi, with long, thin blades that create clean, glossy cut surfaces. This piece is a clean Yanagiba with minimal signs of use and little visible Hagane darkening. At 8-sun (around 240 mm), it is easy to handle in the home kitchen while still delivering a professional sashimi experience.

The knife has a single-bevel Hagane (carbon steel) blade, ideal for sashimi with sharp, precise performance.

It has been sharpened, so it is ready to use immediately upon arrival. Please handle with care when unpacking. The price includes the sharpening fee.

It bears the engraving "杉本" (Sugimoto).

This Sugimoto Yanagiba is well suited to preparing sashimi and sushi at home or in a sushi restaurant, giving sushi chefs a traditional single-bevel tool for clean, one-stroke slicing.
