Mitake Yanagiba Knife

This is a Yanagiba knife from Mitake. Yanagiba knives are used for slicing sashimi, with long, narrow blades that excel at smooth pulling cuts. This knife appears to have been stored rather than heavily used; although there is some storage patina, it does not affect performance and the piece can be considered to be in beautiful condition overall. The kurouchi finish with hammered pattern gives it a distinctive, handcrafted look.

The knife has a single-bevel Hagane (carbon steel) blade, offering excellent sharpness and cutting feel.

It has been sharpened, so it is ready to use immediately upon arrival. Please handle with care when unpacking. The price includes the sharpening fee.

It features the engraving "美竹" (Mitake).

This Mitake Yanagiba is a fine choice for preparing sashimi or sushi at home, combining traditional single-bevel performance with a striking kurouchi hammered finish.
