Yoshihiro Yanagiba Knife

This is a Yanagiba knife from Yoshihiro in Tokyo. Yanagiba knives are traditional Japanese sashimi knives designed to slice sashimi with a long, slender blade that creates beautiful, smooth cut surfaces. Although typical Hagane patina is visible, the freshly sharpened edge reveals a bright, clean silver core. With a 26 cm blade, it is recommended for those who want to try a substantial, full-length carbon steel Yanagiba and enjoy serious sashimi at home.

This knife has a single-bevel Hagane (carbon steel) blade, ideal for sashimi-focused tasks with very sharp cutting performance.

It has been sharpened, so it is ready to use immediately upon arrival. Please handle with care when unpacking. The price includes the sharpening fee.

It features engravings "東京" (Tokyo) and "良弘" (Yoshihiro).

This long Yoshihiro Yanagiba is perfect for slicing sashimi and preparing sushi at home or in a sushi restaurant, and is well suited to sushi chefs who want to experience the feel of a full-length traditional sashimi knife.
