Yoshiya Yanagiba Knife

The yanagiba is a traditional Japanese sashimi knife designed to create a clean, beautiful surface by slicing with a single long pull cut.

This knife is made of hagane (high-carbon steel) with a single bevel. It shows little sign of use, with minimal blade wear, and features a clean water buffalo handle.

It has been sharpened and is ready to use upon arrival. Please handle with care when unpacking. The price includes the sharpening service.

It features engravings “ヨシヤ別作” (Yoshiya Special Order) and “最上” (Saijo / Top Grade).

For sushi and sashimi prep, a yanagiba’s long, single-stroke cut helps avoid tearing the fish—one reason sushi chefs value this style in professional sushi restaurants.
