Tako-Hiki Knife Blacksmith Deadstock Blank

This is a blacksmith-made deadstock blank for a Tako-Hiki knife. It is shaped as a Kanto-style sashimi knife, ready to be finished into a Tako-Hiki for slicing sashimi and octopus. The blade has no cutting edge yet and is intended to be ground and sharpened, making it ideal for DIY knife makers who want to create a one-of-a-kind sushi knife.

This piece is a single-bevel Hagane (carbon steel) blank made from high-quality Shirogami #2 Yasuki steel, as indicated by the "安来鋼白二" engraving. Once sharpened, it can deliver extremely keen cutting performance.

It features the engraving "安来鋼白二" (Yasuki Steel Shirogami #2).

Finished properly, this Tako-Hiki blank can become a professional-grade sushi and sashimi knife, ideal for a sushi chef seeking a custom-made Kanto-style blade.
