The Honesuki is a Japanese boning knife with a narrow, sharp blade, ideal for precision work such as removing meat from bones.
This knife is single-beveled and made from high-carbon steel, known for its razor-sharp edge.
There is some natural patina from the high-carbon steel, but the edge is bright and clean.
