Carlos spent many years traveling and working across Europe. At the age of 60, he found himself increasingly fascinated by Japanese knives and began researching them in depth.
After discovering Yoichiro Knife, Carlos told us that he somehow felt drawn to our knives without knowing exactly why. In his words, there was “a lot of good energy there.”
His appreciation for the Usuba grew as he began using it. Carlos especially enjoys the traditional single-bevel blade, finding that its unique shape and feeling suit him better than a Nakiri.
For Carlos, the Usuba is more than simply a kitchen tool. He described the knife as a beautiful object and shared how much he enjoys both its appearance and the experience of using it.
Alongside his interest in Japanese knives, Carlos is also working on several books, including science fiction stories and a book based on his many years of professional experience.
