Masamoto Tako-hiki Knife

This is a sashimi knife with a water buffalo handle, measuring approximately 33 cm (11 sun) in length.

Due to maintenance and sharpening, the engraving is somewhat faded, but it was acquired together with several other Masamoto knives, so it is likely a genuine Masamoto product.

While Yanagiba knives are well-known for sashimi, this is a Kanto-style sashimi knife, known as a "Tako-hiki" (octopus slicer). Despite the name, it is not specifically for cutting octopus.

The differences from the Yanagiba knife include its thinner profile and flat tip.

In terms of slicing sashimi, the Tako-hiki knife is superior and can handle large volumes more efficiently. It is also preferred for cutting long sections and for tasks like filleting, making it a valuable knife that deserves more recognition.

The knife has been sharpened, so it cuts well and is ready to use. Please handle it with care when unpacking. The price includes the sharpening fee.
