Honyaki Fugu-hiki Knife

The Fugu-hiki knife is a specialized sashimi knife, crafted thinner and narrower than a typical Yanagiba, specifically designed for slicing delicate fugu (blowfish) sashimi into thin pieces. This knife starts with a thickness of 3mm at the base and tapers down to approximately 1mm at the tip, allowing for extremely precise slicing.

As shown in the photos, the hamon (temper line) is visible, showcasing its Honyaki craftsmanship, a sign of a high-quality knife.

The knife has been sharpened, so it cuts well and is ready to use immediately. Please handle it with care when unpacking. The price includes the sharpening fee.
