Masafumi Ko-Deba Knife
This is an aji-kiri (small deba) knife by Masafumi.
The aji-kiri is a compact Japanese knife designed for processing small fish and detailed work. This item shows minimal signs of use.
The black surface on the blade is a black oxide finish, which helps reduce red rust while giving the blade a subdued dark appearance.
This finish creates a strong contrast between the dark body and the polished cutting edge.
Over time, the appearance of the black oxide will gradually change, adding character unique to carbon steel knives.
As this is not a newly applied finish, slight variations in tone may be present, which can be appreciated as part of its natural texture.
This knife is single-beveled and made of hagane (carbon steel), offering excellent sharpness.
A compact and precise knife ideal for handling small fish, commonly used in detailed prep work in traditional Japanese kitchens.
