Sotan Yanagiba Knife
The yanagiba is a traditional Japanese sashimi knife designed to create clean, beautiful slices with a smooth pull cut.
This knife is single-beveled and made of hagane (high-carbon steel). It has a distinctive marble-pattern handle. While there is some darkening typical of carbon steel, the sharpened edge shows a clean silver hagane finish.
It has been sharpened and is ready to use upon arrival. Please handle with care when unpacking. The price includes the sharpening service.
It features engravings “登録” (Registered) and “宗丹作” (Sotan-made). The handle sticker remains, though it is rubbed.
For sushi and sashimi, a carbon-steel yanagiba like this helps you slice in long, single strokes for a cleaner surface and smoother bite—exactly what sushi chefs aim for in sushi restaurants.
