Aritsugu Yanagiba Knife

The yanagiba is a traditional Japanese sashimi knife designed to create a clean, beautiful surface through smooth pull-cut slicing.

This knife is single-beveled and made of hagane (high-carbon steel). There are spotty dark marks from storage time, but the sharpened edge shows a clean silver hagane surface. The water buffalo handle has some insect damage, but it should not affect use—please check the photos as well.

It has been sharpened and is ready to use upon arrival. Please handle with care when unpacking. The price includes the sharpening service.

It features engravings “特製” (Special Edition) and “有次” (Aritsugu).

For sushi and sashimi, a true yanagiba helps you make long, single-stroke cuts that keep the fish’s texture intact—exactly why sushi chefs value this style in sushi restaurants.
