Minamoto Sukehisa Honesuki Knife

A honesuki is designed for working around bones and trimming sinew, and thicker, sturdier types are especially helpful when you need to apply force.

This knife is double-beveled and made of hagane (high-carbon steel). It is a solid, thick honesuki that should hold up well to real butchery work.

The black area of the blade has a Black Oxide Finish.
A Black Oxide Finish forms a stable oxidized layer on the steel surface, helping reduce red rust while giving the blade a calm, dark appearance.
The rugged black blade and the polished silver edge create a strong contrast, giving the knife a bold, tool-like presence.
With continued use, the look of the black oxide area will gradually change—one of the unique charms of carbon steel knives.

It has been sharpened and is ready to use upon arrival. Please handle with care when unpacking. The price includes the sharpening service.

It features engravings “登録商標” (Registered Trademark), “源助久” (Minamoto Sukehisa), and “特製” (Special Edition).

Carbon-steel honesuki knives are favored by many cooks because they bite confidently into connective tissue—ideal when you want clean separation around joints and bone.
