Sugimoto Deba Knife

A deba is a traditional Japanese knife used for breaking down fish, known for its thick, sturdy blade.

This knife is single-beveled and made of hagane (high-carbon steel). It has been finished with a blackened rust-prevention treatment, and the handle has been replaced with a new one. Please enjoy giving this “reborn” tool a long second life in your kitchen.

It has been sharpened and is ready to use upon arrival. Please handle with care when unpacking. The price includes the sharpening service.

It features the engraving “杉本” (Sugimoto).

A rehandled deba like this is a great way to get classic carbon-steel performance with a fresh, comfortable grip—ideal for regular fish breakdown before sushi and sashimi slicing.
