Hayashiya Sadatsugu Aji-Kiri Knife
An aji-kiri is a compact knife used like a small deba, ideal for breaking down small fish such as horse mackerel (aji).
This knife is single-beveled and made of hagane (high-carbon steel). It is in very clean condition with hardly any sign of use, though it likely had some storage time.
It has been sharpened and is ready to use upon arrival. Please handle with care when unpacking. The price includes the sharpening service.
It features the engraving “林屋定次” (Hayashiya Sadatsugu).
For home fish prep, an aji-kiri is a great “small but serious” tool—easy to control, yet strong enough for heads, bones, and quick filleting.
