Izutsuki KIYA Yasuki Aogami Nakiri Knife
This is a nakiri knife from Izutsuki KIYA. Nakiri knives are double-bevel Japanese vegetable knives specialized for straight cuts, ideal for shredding and chopping vegetables. This piece uses Yasuki Aogami steel and originally had a kurouchi finish; much of the blackened surface has been removed through maintenance, revealing the Hagane underneath. The price reflects this, but the knife now has a unique, characterful appearance. The water buffalo handle marks it as a high-grade nakiri.
The knife has a double-bevel Hagane (carbon steel) blade made with Aogami steel, known for its outstanding sharpness.
It has been sharpened, so it is ready to use immediately upon arrival. Please handle with care when unpacking. The price includes the sharpening fee.
The blade carries the Izutsuki KIYA logo and engravings "木屋" (Kiya) and "安来鋼青紙" (Yasuki Aogami Steel).
This Aogami nakiri is ideal for vegetable-focused cooks who want the bite and edge retention of blue paper steel in a traditional KIYA blade with plenty of personality.
Length: 290mm
Blade Length: 160mm
Blade Width: 53mm
Blade Thickness: 4mm
Weight: 150g
