Minamoto Sadamitsu Gyuto Knife
A gyuto is an all-purpose chef’s knife that handles meat, vegetables, and fish, with a shape that is easy to use for everyday cooking.
This knife is double-beveled and made of hagane (high-carbon steel). It appears to have been used very little. There is some light darkening typical of carbon steel from storage time, but it is shallow, and the sharpened edge shows a clean silver hagane finish. A sticker remains on the handle.
It has been sharpened and is ready to use upon arrival. Please handle with care when unpacking. The price includes the sharpening service.
It features engravings “登録” (Registered), “源貞光” (Minamoto Sadamitsu), “日本鋼” (Japanese Steel), and “TOKYO.”
A carbon-steel gyuto like this has a lively cutting feel—great if you enjoy that crisp bite on ingredients and don’t mind basic wipe-and-dry care.
