Sakai Takayuki Sujihiki Knife
This is a Sujihiki knife from Sakai Takayuki. Sujihiki knives are slim slicers designed for carving meat and making long, smooth cuts. This particular model has a narrow, kiritsuke-style profile, providing excellent control for fine slicing. Some light patina typical of Hagane steel is present from storage, but the edge itself has been polished to a bright, clean finish. The original seal remains on the handle, indicating minimal use.
The knife has a double-bevel Hagane (carbon steel) blade, providing very sharp and precise slicing performance.
It has been sharpened, so it is ready to use immediately upon arrival. Please handle with care when unpacking. The price includes the sharpening fee.
It features engravings "登録" (Registered), "堺孝行" (Sakai Takayuki), and "謹製" (Respectfully Crafted).
This Sujihiki is ideal for carving roasts, slicing large cuts of meat, and can also serve as a refined slicer for sushi or sashimi preparations.
