Mitake Yanagiba Knife

This is a Yanagiba knife from Mitake. The Yanagiba is a long, thin Japanese knife designed for slicing sashimi and other delicate preparations. This piece appears to have been stored unused and still includes its original tag, seal, and box. The kurouchi finish and hammered pattern create a striking, handcrafted appearance.

The knife has a single-bevel Hagane (carbon steel) blade that delivers very fine, sharp cuts, ideal for sashimi work.

It has been sharpened, so it is ready to use immediately upon arrival. Please handle with care when unpacking. The price includes the sharpening fee.

It features the engravings "美竹" (Mitake) and "手打" (Hand-Forged).

This Yanagiba is well suited for preparing sashimi at home, and it is also an appealing option for sushi chefs seeking a visually distinctive sashimi knife for sushi restaurant service.
