The yanagiba is a Japanese knife for slicing sashimi, where sharpness directly affects the finished look and texture.
This knife is single-beveled and made of hagane (high-carbon steel). With a 240mm blade length, it is a practical size for enjoying sashimi at home with most fish, and it is also a workable size for professional use.
It has been sharpened and is ready to use upon arrival. Please handle with care when unpacking. The price includes the sharpening service.
It features the engraving “俊昭” (Toshiaki).
