Kazunori Mioroshi Knife

A mioroshi (mioroshi-deba) is a fish butchery knife that can cover most steps of breaking down fish, and it is slimmer than a standard deba.

This knife is single-beveled and made of hagane (high-carbon steel). It appears to have been stored unused or nearly unused. Because it is a thinner deba-style knife, it may also be used somewhat like a single-bevel gyuto, and it should be capable of slicing sashimi to some extent as well. It will be delivered with a box, but it is likely not the original box. It comes in a different “源光金” (Minamoto Mitsukane) box that fits the size, and it will be shipped as-is—please consider the box as a bonus item.

It has been sharpened and is ready to use upon arrival. Please handle with care when unpacking. The price includes the sharpening service.

It features engravings “一則作” (Kazunori-made), “登録商標” (Registered Trademark), “一則” (Kazunori), and “手打” (Hand-Forged).

For anyone preparing fish at home, a slim mioroshi-deba can feel more nimble than a thick deba while still giving you the strength and bite of carbon steel for tougher tasks.
