Sakai Toji Fugu-Hiki Knife

A narrow, single-bevel sashimi knife for ultra-thin fugu slices (tessa) and other fine sashimi tasks; fitted with a white water buffalo handle.

Hagane high-carbon steel for razor-sharp edges and whisper-thin cutting.

Light signs of storage on the handle (minor insect marks) that do not affect use. Professionally sharpened; ready on arrival. Please open carefully. Sharpening fee included.

Engraved “堺刀司” (Sakai Toji) and “岩国作” (Iwakuni).

Purpose-built for sushi and sashimi—made for translucent, even fugu slices.
