Echigonokami Deba Knife

The Deba is a stout single-bevel knife for processing fish, with thickness and weight to handle bones. The blade uses Silver Paper No.1 (Gingami-1), a stainless-type steel developed to offer carbon-like bite with improved corrosion resistance. It is stainless single-bevel for easier maintenance.

Sharpened and ready to use; handle with care when unpacking. Sharpening fee included.

Faint engravings (hard to capture in photos) include "日立 ヤスキハガネ 銀紙一号" (Hitachi Yasuki Hagane Gingami-1) and "越後守" (Echigonokami).

Excellent choice for home sashimi prep: Deba geometry plus Gingami-1 gives robust edge stability with less rust worry.
