Masamoto Gen Gyuto Knife
The Gyuto is a versatile Japanese chef’s knife for meat, fish, and vegetables, widely used in Western-style kitchens. This piece is finished as a mostly single-beveled blade (roughly 90:10), retaining its original asymmetry. “Hanaki-kojo-sei” suggests it was made at Hanaki Works in Taito-ku, Tokyo.
The single-beveled high-carbon steel blade delivers excellent sharpness. It has been professionally sharpened and is ready to use immediately upon arrival. Please handle with care when unpacking. The price includes the sharpening fee.
It features engravings "登録" (Registered), "正元" (Masamoto Gen), and "花木工場製" (Hanaki-kojo-sei).
A fine example of Tokyo craftsmanship, perfect for chefs who want precision and authenticity.
Length: 365mm
Blade Length: 245mm
