This is an Aji-Kiri knife made by Igarashi. Aji-Kiri knives are compact deba-style blades that excel at preparing and cleaning small fish. This piece has a solid blade thickness and shows very little sign of use, giving it a firm and dependable feel in hand.
The knife features a single-bevel Hagane (carbon steel) blade, providing sharp, effortless cutting and easy handling.
The knife has been sharpened and is ready to use immediately upon arrival. Please take care when opening the package. The listed price already includes the sharpening service.
It bears the engraving “いがらし作” (Igarashi Saku). This knife is ideal for detailed fish prep such as gutting, trimming, and filleting small fish for sashimi plates or sushi garnishes, while still being easy to control even for non-professional cooks.
