The Yanagiba is a single-bevel Japanese knife specialized for slicing sashimi in long, smooth strokes. This piece is marked “最上本鍛錬,” indicating top-grade forging.
Hagane high-carbon steel, single bevel, for pristine edges and glassy cuts.
