Hayashi Kogyo Aji-Kiri Knife

This is an Aji-Kiri knife shaped like a small Deba, ideal for filleting small fish like horse mackerel. Made by Hayashi Kogyo, known for brands like Kiyotuna. The blade shows typical darkening of high-carbon steel but the edge has a clean silver finish. The original forging pattern remains, giving it a beautiful character.

This is a single-bevel high-carbon steel knife, prized for its sharpness.

It has been sharpened and is ready to use upon arrival. Please handle with care when unpacking. The price includes the sharpening fee.

It features engravings "ホコ" (Hoko) and "手造の味" (Handmade Quality), with the original Hayashi Kogyo sticker intact.
