Hisamoto Unagi-Saki KnifeThe Unagi-Saki is a specialized Japanese knife designed for filleting eel or conger by opening from the back or belly. The knife has been lightly cleaned but not professionally sharpened at our shop; it retains its original edge, which is still reasonably sharp. Since eel knives are often customized to the user’s preference, we recommend finishing the edge to your liking.The blade is single-edged high-carbon steel, offering excellent cutting performance.It features engravings "登録" (Registered), "久元" (Hisamoto), and "特撰" (Special Selection).A classic tool for traditional Japanese eel preparation, this knife offers both functionality and room for personal edge tuning.
