The Tako-Hiki is a traditional sashimi knife from the Kanto region, known for its long, narrow, and straight blade—ideal for slicing fish with delicate precision.
This single-beveled knife is made from high-carbon Aogami #2 (Blue Steel No.2), renowned for its sharpness and toughness. The handle and blade are slightly offset in design, which may help avoid hand contact with the cutting board during slicing—a practical detail for sashimi preparation.
The knife has been sharpened and is ready to use. Please handle with care during unpacking. The price includes sharpening.
It features engravings "濃州友正作" (Noshu Tomomasa) and "青二号" (Aogami #2). The Aogami mark is slightly faded from maintenance.
